Discover the unique coffee from the Villa Galicia farm, owned by experienced producer Mauricio Salaverria. Located on the famous "Route of Flowers", this picturesque 12-hectare farm is renowned for its more than a century of history and the incredible care it takes with each bean.
The story of the farm began when Don Manuel Ariz left Spanish Galicia for the beautiful Concepción de Ataco region of Ahuachapán, where he discovered a place known as "high springs". Here he invested in land with a unique clay and limestone terroir on which Villa Galicia now stands.
Mauricio continues this tradition, but goes even further. He has built an organic processing station on the farm and developed an innovative drying process that brings out the tropical notes of his coffee. Unlike conventional drying methods, which take only 10 to 15 days, Mauricio lets his coffee dry in the shade for almost 30 days on special raised beds. This time-consuming process allows the rich, tropical flavours to fully develop, which you'll love after the first sip.
