We are pleased to present our two competition coffees from La Cabaña Farm, run by passionate producer William Ortiz. One of these exceptional coffees is Colombia Ombligon, a variety that stands out for both its unique processing and irresistible flavour notes. At first sip, you will discover the fresh and sweet flavours of apricot jam, mango, orange blossom and the subtle bitterness of cocoa nibs, creating a perfectly balanced symphony of flavours. These coffee gems shone at this year's BaristaCup competition in Ostrava, where we proudly presented their unique flavour profile and story.

The family farm La Cabaña, owned by the Ortiz family for the second generation, has also been their home since 2009. It is located in the picturesque hills with breathtaking views of the surrounding towns and villages. Coffee cultivation in this family was started by Libardo Ortiz, who led his children to a love of coffee. His son William Ortiz is a passionate experimenter who specialises in various fermentation processes, including lactic and carbonic fermentations. His brother Julian focuses on the business side and runs his own coffee processing station under the Finca Kaizen brand.

William's approach to growing coffee focuses on experimentation, particularly with microorganisms such as lactobacilli, to achieve a better flavour profile. He aims to continually improve the quality of coffee from the family farm and is gradually standardising his fermentation practices. On the other side is William's father, Libardo, who prefers traditional coffee growing methods and advocates classic washed coffees with a clean taste.

William represents the third generation of coffee growers in the family. At the age of 15, he began to educate himself in the field of selective coffee, attending courses aimed at improving the quality of production. In the past, William faced challenges related to coffee prices and limited rural development opportunities, which led him to consider leaving farming. Gradually, however, he discovered a deep interest in improving coffee and found added value in experimental fermentation processes, which is beginning to yield the first positive results.

The coffee is harvested only from 100% ripe cherries, which then undergo anaerobic fermentation for 60 hours and then oxidation for 24 hours. This is followed by further fermentation using the juice from the first fermentation, which takes 100-120 hours. After this process, the coffee is lightly washed to remove excess juice and finally dried in an oven for approximately 25 days to achieve the optimum result in taste and quality.
