The history of the farm dates back to 1950, when it was acquired by Carlos' grandfather. After his sudden death, the farm passed into the hands of his mother, who was then very young. This brought many challenges, but the mother kept the farm in its original state and continued the traditional way of farming. Carlos' father later took over the management of the farm and began to transform the traditional cultivation of commodity coffee. He gradually made changes, from planting new varieties of coffee to pruning existing trees.

Carlos is among the fifth generation of coffee farmers on this farm in Mexico and in 2012 he participated in the Taza Excelencia Mexico competition for the first time, where he reached 6th place. This location marked a big turning point for him and sparked a new revolution in the approach to coffee. He and his family began researching different varieties of coffee plants and experimenting with new processing processes. As for the competition, he proudly continues with it. In 2023 he won 3rd place at the Cup of excellence with a mixture of Gesha and Pacamara.

Virtually all of the premium coffees produced on this farm, with the exception of a small number, are dry-processed and some undergo fermentation in sealed plastic containers that protect the coffee from UV rays and are then dried on African beds.

Coffee from Mexico is ideal for filtered preparation and offers wonderful taste notes of chocolate pralines, dried cranberries and sour cherry liqueur.
