Raúl and his siblings represent the sixth generation of farmers who have been producing coffee continuously since 1892. What makes their coffee truly special is the organic cultivation with the help of local flora and endemic bees that pollinate the coffee trees. Beekeeping in the Raúl family plays a key role in maintaining the ecological balance and gives the coffee a unique characteristic.

The farm is located in a microclimate between the mountains, where the mist rising from the Gulf of Mexico naturally hydrates the plants. With sustainable practices such as natural drying on African beds and organic wet processing with minimal water consumption, every step is aimed at protecting nature and maximizing coffee quality. Raúl's family has not used petroleum-based fuels for three decades, even when drying coffee, using only solar energy or steam from fallen tree branches.

The coffee is carefully stored in a grain silo, which ensures optimal conditions for the long-term preservation of its quality. This considerate approach to processing and storage guarantees rich flavour and high quality in every cup.

Processing

The 64 HRS process involves picking the coffee cherries at an early stage of ripeness. They are then carefully inspected and left to rest for 64 hours in anaerobic tanks where the flotation process takes place. After this stage, the cherries are stripped of the top skin only. Once the farmers have confirmed that the cherries have reached the correct level of fermentation, they move on to slow drying, which takes place on terraces exclusively on African beds. This process can take several days until the ideal moisture level is reached.

This lot consists of the marsellesa, bourbon and typica varieties. The blend was created to achieve a balanced cup that reflects the specific characteristics of each variety. The resulting coffee has a clean taste and harmonious profile, making it a versatile choice, ideal for making filter coffee.
