Sabio Coffee is a unique coffee company in Nicaragua that combines passion for coffee, sustainability and responsibility towards people and nature. The Finca Aurora farm, along with three other farms, forms the core of their business. On these farms they not only grow, but also process, package and export each lot of coffee directly to their customers. The result is a selection of coffees with unique flavor profiles and SCA scores ranging from 82 to 90+.
Sabio Coffee specializes in unique varieties such as Parainema, Icatú, Geisha, Caturra, Java, Maracaturra and Pacamara. They carefully select the best varieties for the unique microclimates of their farms so that each bean reflects high quality and care. With full control over production, they are able to create coffee profiles tailored to the needs of their customers. They are experimenting with different processing methods - from the traditional washed process through honey and natural to modern fermentations such as anaerobic fermentation or the use of wine yeast.
