Coffee from Peruvian farmer Anai will hit your nose with its sweet almond aroma with a dose of tangerine juice. Thanks to its long fermentation, it is reminiscent of rich sweet liqueurs and leaves a pleasant aftertaste of dark chocolate on the tongue.

Peru Anai Dalila

Anai Dalila farms 2 hectares of land with her husband Arthur. In addition, Anai herself has another 4 hectares dedicated to growing different varieties of coffee - Bourbon, Caturra, Geisha, Catuai, Pache and Catimor. Anai is actively involved in the entire growing process and enjoys experimenting with the processing.

Her farms are located in the district of La Libertad, San Ignacio, which is an ideal place to grow coffee thanks to its high humidity, ideal altitude and rich, fertile soil. Anai's dad is also a specialty coffee grower and has his own farm. Thanks to him, Anai got into growing and processing fine coffee and continues the family tradition of growing quality coffee.</p>

Due to the lack of local coffee pickers, the whole family has to pick cherries throughout the season. In recent years, Anai and her family have begun experimenting with different fermentation techniques. After hand-picking, they put the cherries in a tank of water to remove any unripe grains. The cherries are then fermented in plastic bags for 36-48 hours and finally dried for 25-30 days.
