Enrique López Aguilar founded the farm in Oaxaca, specifically in Candelaria, in 2012. This farm, originally an abandoned farmhouse that Enrique bought and began to renovate, has gradually become a centre for the cultivation of quality coffee. On the farm, he plants coffee varieties that are not only of high quality, but also tolerant and resistant to rust. Thanks to specific processing and fermentation processes, the farm's coffees have citrus and floral flavours. At the Chelín farm, Enrique focuses on the purity of the coffee's aftertaste, constantly developing new flavours without losing the original and fundamental ones.
Enrique comes from a family that has been growing coffee since 1910. In 2000, after the death of his father, he decided to learn how to grow and harvest coffee. Although he did not drink coffee and was 33 years old at the time, he began to study books on coffee, its history and processing. He became a Q Grader and won many competitions for the best organic coffee and the Cup of Excellence award. In 2012 he decided to leave the farms in Chiapas and start his own farm in Oaxaca. Today, he is known as a great visionary of fine coffee in Mexico.
